I have always somewhat envied brown eyed girls because of the Van Morrison song... All of us green-eyed girls got was a song about making love in a Cabriolet and an accidental pregnancy by Tim McGraw... How tacky.
Anyway, I am happy to introduce and proudly endorse The Brown-Eyed Baker. Her Peanut Butter Fudge recipe has been my go-to for a while now. Love it!

The Pioneer Woman
OK, I'm being a little judgey here by saying that I think the name of this blog is quite cheesy... It reminds me of the Sister Wives... Anyway, this woman is a genius. Many of her recipes call for red meat, but I've substituted some with eggplant. I can't wait to try these Restaurant-Style Smashed Potatoes... Without the bacon of course :)
